PULIHORA / ANDHRA TAMARIND RICE


PULIHORA.... One of the popular south indian recipe prepared specially during festival days... This is prepared in different varieties in different regions.. Today i am sharing with you andhra style of recipe using tamarind juice.. The aroma of the tadka  makes you feel mouth watering and the tangyness of tamarind juice refreshes your taste buds...


Preparation time : 20 min
Cooking time : 30 min
Serves 3


INGREDIENTS
1 and half glass rice, cooked and cooled
1 big lemon size tamarind, soak in hot water and extract pulp
2 sprigs curry leaves
6-7 green chillies, cut into slits
4 tbsp oil
salt as per taste
1 tsp turmeric powder
1 tbsp jaggery
2 tbsp chanadal / senagapappu
FOR THE TADKA / SEASONING / POPU
5-6 tbsp oil
3 tsp urad dal / minapappu
2 tsp mustard seeds / aavalu
1/2 tsp fenugreek seeds / menthulu
2 sprigs curryleaves
1/2 tsp hing / inguva / asafoetida
8-10 redchillies
2 tbsp ground nuts / pallilu

PREPARATION 
  • Cook rice and keep it aside. Let it cool. Once it is cooled add 3 tbsp oil, turmeric powder, curryleaves, mix well and keep it aside.
  • Soak tamarind in hot water and extract the pulp, the pulp should be in medium consistency ( i extracted 4 times from it, by adding little little water).
  • Fry the chanadal in 1 tbsp oil and keep it aside.
 COOKING METHOD 
  • Take a wide cooking vessel and add the extracted pulp, greenchillies, fried chanadal, jaggery and let it boil on low flame. 
  • Once it starts thickening take a wide cooking pan and add oil. Once the oil is hot add the ingredients FOR THE TADKA mentioned above one by one and let it cook. Once the tadka is fried a nice aroma will come.
  • Add this to the boiling tamarind mixture and let it cook until the gravy is thickened. 
  • Add this to the rice mixture and mix well so that it spreads all over the rice.
  • Let it rest for 3-4 hours.
  • Serve with yoghurt / curd.
TIPS
  • U can prepare the tamrind extract and store in refrigirator. Then you can prepare this rice whenever you want.
  • U can increase / decrease green chillies depends on your taste buds.
  • When you prepare this leave it for 4 hours,as the flavours will set completely.
