ALOO GOBI FRY / POTATO CAULIFLOWER FRY


As i am busy with other activities i am back with another north indian vegetarian popular recipe that is ALOO GOBI FRY.. As you know cauliflower is rich in fiber and potato is rich in carbohydrates.. Combination of these two vegetables and addition of spice powders gives a very nice and tasty flavor to the dish.. One of the best side dish for roti and pulka..

 


Preparation time : 20 mins
Cooking time : 20-25 mins
Serves 2-3

INGREDIENTS
1 small cauliflower, seperated into florets
2 large potatoes, peeled and chopped into small cubes
2 medium onions, sliced
1 medium tomato, chopped into small pieces
1 sprig curry leaves
3 tbsp oil
salt as per taste
1 tsp chilli powder
1/4 tsp turmeric powder
1 tsp coriander / dhaniya powder
1/2 tsp jeera powder
1 tsp garam masala powder
1/4 cup coriander leaves

PREPARATION  
  • Seperate cauliflower into florets. Peel the potatoes and chop into small cubes.
  • Take a pressure cooker and pressure cook these vegetables for 1-2 whistles(do not pressure cook for more than 2 whistles, because more than that may cause mashing of vegetables) Strain and keep aside.
METHOD OF COOKING 
  • Take a wide cooking pan and add oil. Once the oil is heat add onions, curry leaves and fry them until they turn into golden brown color.
  • Add chopped tomato and fry them until they are completely mashed. 
  • Add these boiled vegetables. Mix gently.
  • Add salt, chillipowder, dhaniyapowder and jeera powder.
  • Mix well and fry on slow heat on 5-10mins by mixing gently in the middle.
  • Add garam masala powder and coriander leaves and fry for another 2 mins.
  • Serve hot with pulka, roti or rice.
