LEMON RICE / NIMMAKAYA PULIHORA


LEMON RICE / NIMMAKAYA PULIHORA... This is one of my all time favorite recipe sharing with you.. As i said before when i posted tamarind rice recipe.. this is another style of pulihora recipe which is very simple, quick and easy to prepare.. Addition of lemon juice and tadka gives a very nice and tasty flavor to the rice and aroma of the tadka completely fills your home and makes your mouth water.... Kids also love this recipe due to tangyness of lemon juice and you can give it in lunch box to them..


 INGREDIENTS
  • 2 cups boiled rice, cooked and cooled, u can use left over rice too..
  • Juice of 3 lemons
  • 1 sprig curry leaves
  • 2 tbsp oil
  • 1 tsp turmeric powder
  • salt as per taste
  • FOR THE TADKA / SEASONING
  • 1 tsp senagapappu / chanadal
  • 1 tsp minapappu / urad dal
  • 1 tsp aavalu / mustard seeds
  • 1 sprig curryleaves
  • 5 green chillies, cut into slits
  • 6-7 red chillies, broken into 1 inch pieces
  • 1/2 tsp hing / asafoetida
  • peanuts, fistful
  • 4-5 tbsp oil
PREPARATION
  • Cook the rice, let it cool. Once it is cooled transfer into a wide mixing bowl. Add turmeric powder, oil, curry leaves, salt and mix well. Keep it aside.
METHOD OF COOKING  
  • Take a kadai and add oil. 
  • Once the oil is hot add the ingredients FOR THE TADKA mentioned above one by one and let it fry.
  • Add this tadka to the rice. Mix well.
  • Then add lemon juice, make a place in the centre of the rice and then add lemon juice and mix well, by doing this lemon juice will be completely mixed in the rice.
  • Let it rest for 1 hour so that flavours of the tadka and lemon juice will be completely absorbed by the rice.
  • Serve with any pickle of your choice and curd.
TIPS 
  • U can add lemonjuice more or less, as per your tastebuds.
  • U can also prepare this with left over rice also.
