Hi all,
Today i prepared my all time favorite yummy PANEER VEGETABLE PULAO... learnt from my mom.... MOM this one is dedicated for u :)

Cooking time :30 min
Serves 2-3
INGREDIENTS
1 glass basmati rice/ normal rice (soaked for half an hour)
1/2 cup fresh mint leaves/pudina
100 gms paneer, cut into small cubes either directly or fried
2 medium potatoes
1 carrot
15-20 french beans
1 large onion
1 medium tomato
4 cloves/lavangalu
4 cardamoms/elachi
1 star anise/anasapuvvu
1 bay leaf/ biryani aaku
1 tsp chillipowder
pinch of turmeric powder
3 tbsp curd
1 tbsp lemon juice
2 tbsp ghee
3 tbsp oil
salt as per taste
coriander leaves/kotthimeera for garnish
FOR THE PASTE
1 medium onion
1 medium tomato
5-6 greenchillies/pacchimirapakayalu
10-15 garlic cloves/ vellulipaya
2 inches ginger/allam
METHOD OF PREPARATION
- Grind all the above ingredients for the paste in a mixie jar. The paste should be semicoarse.
- Place pressure cooker on the stove and add 3 tbsp oil and 1 spoon ghee. Let it heat.
- Then add cloves, cardamoms, star anise and bay leaf.Once they are cooked nice aroma will come.
- Then add pudina and onion, let them fry. Next add tomatoes and let them cook.
- Then add the grinded paste. Let it fry. Check the paste it should not be burnt.
- Add potatoes, carrot n french beans.
- Once they are cooked add chillipowder, salt and turmeric powder.
- Add paneer and curd and fry for 5 mins on medium heat.
- Add the soaked rice and fry for 2 mins. Rice should be coated with all the masala.
- Add 2 glasses of water and let it boil. Once it boils add lemon juice and 1 tbsp ghee. This helps in cooking the rice grains seperately.
- Place the lid and cook for 3 whistles.
- Garnish with coriander leaves and serve hot with raita.
