ALOO GOBI MASALA


ALOO GOBI.... yummmm.... This is a very popular combination curry made with potatoes and cauliflower.Potatoes are very rich in carbohydrates and cauliflower is very rich in vitamin c and dietary fiber. This combination is prepared in different varities as fry, dry curry n etc.. using different varieties of spices. But today i am sharing with you simple and easy gravy curry. Goes best with roti, pulka or naan.


Preparation time: 20-30 min
Cooking time:30 min
Serves 2-3

INGREDIENTS

1 small cauliflower, separated into florets
2 medium potatoes, peeled and diced into cubes
salt as per taste
1 tsp chillipowder
1 tsp coriander/dhaniya powder
1/4 tsp turmeric powder
1/2 tsp jeera powder
1/2 cup milk, boiled
3 tbsp oil
FOR THE PASTE
1 large/2 medium onions
2 medium tomatoes
4-5 greenchillies
1 inch ginger piece
8-10 garlic pods
3 cloves/lavangalu
1 inch cinnamon stick/dalchina chekka
1/2 cup coconut pieces( fresh)

METHOD OF PREPARATION
  •  First grind all the ingredients for the paste in a mixer grinder into a fine paste.
  • Pressure cook potatoes and cauliflower for 1 whistle.
  • Take a cooking pan and add oil. When the oil is heat add the grinded paste and let it fry on medium heat for 10 min. Once the paste get fried a nice aroma will come and the oil will separates.
  • Then add milk, mix and let it cook on medium heat until the milk is absorbed completely and oil will seperate. This gives nice and creamy taste to the curry.
  • Add salt, chilli powder, coriander powder and jeera powder. Mix and let it cook for 5 min.
  • Then add boiled potatoes and cauliflower, mix well so that the masala should be completely coated to the vegetables. Let it cook for 5 mins on medium heat.
  • Then add 1 cup water and cook till the gravy thickens on medium heat.
  • Once the gravy thickens off the stove and serve hot with roti, pulka or naan.
