INGREDIENTS
5 purple/white brinjals, diced into 1 inch pieces(place them in salt water, as they will not change color)
2 tbsp ginger-greenchilli paste
salt as per taste
1/4 tsp turmeric powder/haldi
1 tomato, diced into cubes
3 tbsp oil
1 tsp jeera
1 tsp chanadal/ senagapappu
1 tsp urad dal/ minapappu
1 tsp mustard seeds/aavalu
1 sprig curry leaves
METHOD OF PREPARATION
- First dice the brinjal into 1 inch pieces and place them in salt water. Grind ginger and greenchillies into paste and keep them aside.
- Take a cooking pan and add oil. Once the oil is heat add chanadal, urad dal, mustard seeds, jeera, curry leaves and let them splutter. Make sure that the tadka does not get burnt.
- Once the tadka is fried add ginger-greenchillli paste, tomatoes and let them fry for 4-5 min on medium heat until oil is seperated.
- Add the diced brinjals, salt, turmeric powder and mix well. Cook it for 15 min by mixing in the middle on medium heat until is cooked. Once the curry is cooked a nice aroma will come.
- Serve hot with steamed rice or chapathi.
U can add garlic in the paste and 1 tbsp tamarind juice if u like it.
