EGGPLANT or BRINJAL CHUTNEY/ VANKAYA PACCHADI


EGGPLANT CHUTNEY/VANKAYA PACCHADI... This is one of the traditional and famous andhra recipe similar to baingan bharta. This is a simple dish where the brinjal is directly cooked on the gas stove and blended with spices which is very tasty. Today i am sharing with you simple an easy method prepared with very few ingredients.


Preparation & cooking time : 30 min

INGREDIENTS

1 BIG white/purple brinjal(goes best with white one)
salt as per taste
4-5 soaked tamarind pieces
FOR THE TEMPERING/TADKA/POPU
3 tbsp oil
1 tsp urad dal/minapappu
1 tsp aavalu/ mustard seeds
1/2 tsp menthulu/fenugreek seeds
1 sprig curry leaves
5 redchillies
5 greenchillies
5 garlic pods
1/4 tsp hing/asafoetida

METHOD OF PREPARATION
  • First apply oil to the brinjal and roast directly on stove on medium heat until it is completely cooked on all sides. Once cooled remove the peel and keep it aside.
  • Then take a cooking pan and add oil. Once the oil is heat add the ingredients for the tadka one by one and fry on medium heat until it is cooked. Let it cool.
  • Take a mixie jar and add the fried tadka, tamarind and grind it. Then add the cooked brinjal, salt and grind into paste. Transfer into serving bowl.
  • Take a tadka pan add 1 spoon oil, when the oil is heat add 1/2 tsp minapappu/urad dal, 1/2 tsp aavalu/mustard seeds, pinch of hing and 1 sprig curryleaves. When cooked add this tadka to the chutney and mix.
  • Serve with hot steamed rice.
